Fantastical sharing of recipes.

I thought id share another recipe with you all! this one is a South African treat and super sweet and yummy! :) Blog Post here 

 

Koeksisters are a traditional South African sweet dessert and very easy to make.


This is what you need to make these little bites of South African deliciousness...


The koeksister syrup:
· 4 cups sugar
· 1 cup water
· 1 tsp cream of tartar
· ½ tsp tartaric acid
· 1 tsp vanilla essence or 1 tsp grated orange rind or 1 tsp ground cinnamon or 1/3 tsp ground ginger (many variations)


The koeksister batter:
· 1 egg
· 2 cups flour
· 6 tbsp milk
· 6 tbsp margarine or butter
· 2 tsp baking powder
· 1 tsp salt


And this is how you make them...
It is advisable to make the syrup first and to leave it in the fridge overnight.


The Syrup - so simple


1. Add the dry ingredients to the water and bring the mixture to the boil.
2. Allow it to simmer for 10 minutes or until syrupy.
3.Set the syrup aside to cool.
The Koeksisters
1. Sift the flour, baking powder and salt into a mixing bowl.
2.Cut or rub the margarine or butter into the dry ingredients. - butter is best, more flavour
3.Beat an egg thoroughly and add it to the milk. Add this to the flour mixture, taking care to handle as little as possible.
4.Refrigerate the dough for at least one hour.
The tricky part...
5.Roll out the dough to a thickness of ¼ inch.Cut into strips that are approximately 31/2 inches long and 1 inch wide.
Cut each strip into three lengthways, leaving one side uncut, and plait the pieces, pressing the cut ends together firmly.



6.Pre-heat vegetable oil in a deep pan and remove half of the syrup from the fridge.
7.Deep-fry the koeksisters in the oil until golden brown.
8.Drain them for a few seconds on absorbent paper.
9.Dip the koeksisters into the cold syrup, for a few seconds, whilst they are still hot. This will seal the syrup outside and leave the inside of the koeksister dry and fluffy and full of koeksister goodness.


Top tip...
The syrup will gradually become hot, so when you have done about half of the koeksisters take the remaining syrup from the fridge and use this for the balance of the koeksisters.


Koeksisters are a favorite of all South Africans who have a sweet tooth and I am sure you will enjoy them too! :)

I don't have a recipe off the top of my head (I'm at work) but I do make this delicious breakfast meal that is SO easy and I really recommend.

So you start by taking a bagel (I get whole wheat, but you could probably get anything), cut the bagel open and put it on a cookie sheet. Then take slice thin slices of chedder cheese and put that on both sides of the bagel. Then cut thin slices of apple and put that on top of the cheese on both sides. Then sprinkle with cinnamon and put in the oven on broil. Broil until the bagel is crispy and cheese is melted and that's it! Yum!

Bailey's Cheesecake

Ingredients
100g/3½oz butter
250g/8¾oz digestive biscuits, crushed
600g/1lb 5oz Philadelphia cream cheese
25ml/1fl oz Baileys
100ml/3½oz icing sugar
300ml/10½oz double cream, whipped
100g/3½oz grated chocolate
To garnish
200ml/7¼oz double cream, whipped
cocoa powder, to dust
Preparation method
Melt the butter in a pan and add the crushed digestive biscuits. Mix well until the biscuits have absorbed all the butter.
Remove from the heat and press into the bottom of a lined 18cm/7in springform tin. Place in the refrigerator and allow to set for one hour.
Meanwhile, prepare the filling. Lightly whip the cream cheese then beat in the Bailey's and icing sugar. Fold in the whipped cream and grated chocolate. When smooth, spoon evenly onto the biscuits.
Refrigerate and allow to set for a further two hours. Once set, remove and decorate with whipped cream and cocoa powder dusted over the top. Serve.
