I celebrate Christmas. But out of respect to everyone who doesn't, I say "Happy Holidays."
I say both!
Merry Christmas. Not only is it because that's what I believe (that'd be like me trying to say, "Good luck" when I mean "God bless you") BUT I work at the mall (at the Santa set) and the people I'm coming into contact with are either buying presents at Macy's (where we use the bathroom) or coming to see Santa. That leads me to believe they celebrate Christmas, so I feel free to share the spirit:)
Merry Christmas... Jesus is the reason for the season. :)

I say Merry Christmas, unless I know they're strict Jews, Hindus, etc
I generally use Happy Holidays unless it's someone I know in which case I'll use their own holiday to greet them.
I say "Happy Holidays." Most of my friends are Jewish.
Y'know, interesting question. This year I bought two sets of Christmas Cards. One set proclaiming what I believe to be the true reason for the Season- Jesus' birth. Another set simply saying Happy Holidays, etc... I sent one set to friends that I knew were Christians and the other to friends I knew were not. I felt totally conflicted inside about not wanting to push my beliefs on friends that I knew had a different system of beliefs (or lack thereof). I now regret this decision to send different cards. Next year I will just go with a more religious card. I am ashamed of being more preoccupied with the motivation to be politically correct or hesitant so as not to offend, rather than just expressing my beliefs. I think it's important for people to know where you stand, as long as you are loving in your actions. A card and an expression is not an "in your face" way to relay your beliefs to others. So why walk the fence? I mean, you can always throw a card in the trash, or by voicing the mere expression "Merry Christmas" it at least opens a window for conversation about where you stand. You don't have to have an agenda. Just be open.
I say "Feliz Chewbacca Anorak Memorial Sausage Weekly" to confuse and avoid offending people.
I am deeply offended.

Everyone knows Anoraks are false prophets.
