For holidays I usually try to make vegan dishes that are similar to what the omnivores are eating. It tends to make family gatherings more of a learning experience for them, rather than 'look at that weird vegetarian stuff, I'd never eat that' type of thing.
So all the sides are easy enough to swap milk for almond milk and poultry stock for vegetable stock. And instead of a meat dish I like pan fried seitan, of something from Field Roast (that isn't sold everywhere, so I linked it).
One thing that I really like is that my boyfriend's mom always makes "sausage stuffing" separate for us with Gimme Lean from Lightlife.
